The entire farm, including the vineyard, is operated under certified organic processes. Certification is present on all of our wines, which we naturally vinify without the addition of yeasts or other corrective ingredients, and re-ferment in the bottle using ancestral methods. In our area, before industrial fermentation and use of the autoclave, things were always done in this way.
